Did you know that there are 40 different varieties of artichoke that are cultivated for food?

In the West we commonly use globe artichoke (Cynara cardunculus) and in China and Japan they typically use Chinese artichoke (Stachys affinis). Both are highly nutritious and delicious. The Chinese variety has a lovely nutty flavor and is often used as a substitute for water chestnuts in stir-fries.

Globe artichoke can also be used to make medicine to support digestive and heart health. Artichoke leaf extract lowers cholesterol, regulates blood pressure, relieves edema, and helps relax blood vessels.

Do not confuse globe artichoke with Jerusalem artichoke (Helianthus tuberosus), a different plant also known as sunchokes.
