It is famous in Oriental medicine for being one of the few herbs to taste like each of the five flavors: salty, sour, pungent, sweet, and bitter. These flavors are each associated with major bodily systems in 5 Phase Theory and indicate healing attributes themselves. For example, as in the West, bitter is associated with triggering and supporting a healthy digestive system.
